Coconut candy

We usually to prefer homemade, healthy sweets, when we have time to make them. Yesterday, we made a feel-good version of a favorite candy recipe my mom used to make when I was little.


½ cup coconut oil

1 egg

200 gr chopped dates (döðlur)

2 spoons agave syrup

1 ½ cup chopped nuts (coconut, haselnut, almonds, walnuts, pecannuts)

1 tsp vanilla beans

First, heat the egg, dates, agave and coconot oil in a pot until thick. Shape round and roll around in chopped, dried coconut (kókosmjöl). Put in the freezer (or eat right away from the bowl, but only in emergencies) ;)
