Candytime

These past two days I've been craving a little detox after the feasts of Christmas, but at the same time kind of addicted to sweets.

Yesterday night, after a long day of reading, we made two kinds of raw candy, a raw version of the Coconut candy (also seen here) and a batch of Peanut butter sweets as well. Both are very easy to make and take short time to prepare.

The coconut candy we made by blending 300 gr. of dates, 1/2 dl of agave, 1/2 vanilla bean and 2 tablespoons of coconut oil in a food processor until thick. Then added 3 cups of chopped almonds, hazelnuts and walnuts and stirred with a wooden spoon. Finally, rolled them around in coconut flakes and voila!

The peanut butter sweets are even easier, and no advanced kitchen gear is needed. Just stir 1 dl of pure peanut butter (preferably organic), 1 dl agave, 1/2 dl 100% cacao and 4-5 dl of granola. We used heart-shaped silicon forms, but they also look good round or square. Put in the freezer for about an hour and preferably served cool.
