Recipe: (almost) raw pizza

This is the best pizza I have ever tasted (I actually have one in my oven as we "speak"). And what's better, it's actually quite healthy. It doesn't take much time, especially if you have made the sauce beforehand (which I recommend).



Sauce (enough for 4 pizzas, I usually make a whole recipe and then keep half of it in the freezer until next time):

2 cans chopped tomatoes
1 can tomato pure
1 large onion, chopped
2 cloves garlic
1 tablespoon balsamic vinegar
1/2 bottle of sundried tomatoes
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon oregano
1/2 handful of fresh basil leaves (or 1/2 teaspoon)

Instructions:
  • Pour the olive oil to a hot pan, and cook the chopped onion and garlic until light brown.
  • Add the rest of the ingredients and allow the sauce to simmer for around 30-40 minutes.
"Bread":
2,5 dl spelt
3 dl oatmeal
1 dl olive oil
1 1/2 dl warm water
1 teaspoon oregano
1 teaspoon sea salt

Instructions:
  • mix and roll out.
  • Bake in the oven for 10 minutes (at 200 degrees).
  • Take out of the oven and add the sauce.
  • Bake in the oven for 10 minutes (at 200 degrees).
  • Take out of the oven and add mozzarella cheese and toppings of type 1.
  • Bake in the oven until the cheese is light brown.
  • Add toppings of type 2
(p.s. no it's not a typo that the pizza goes 3 times in the oven).

Examples of type 1 toppings (put on before the pizza goes in the oven for the last time):
  • 2 x mozzarella cheese
  • Baked tomatoes (with olive oil and fresh basil).
  • Buffalo mozzarella
  • Mushrooms
Examples of type 2 toppings (put on after the pizza has been in the oven):
  • Parma ham
  • Parmigiano cheese
  • Cucumber
  • Ruccola
  • Sundried tomatoes
  • Strawberries
  • Walnuts
